Muradabadi Biryani or Muradabadi Yakhni Pulao is one of the most popular Biryani dishes from north Indian cuisine. In this method, a yakhni is prepared from meat by boiling meat with whole spices. Then meat is fried with spices and curd; and then rice are cooked along with yakhni water and meat. Muradabadi biryani has it’s own way of cooking and is loved in whole India.

INGREDIENTS FOR YAKHNI PREPARATION
Mutton – 500 grams
WHOLE SPICES
Black Cardamom – 2 nos
Cloves – 4 to 5 nos
Black Pepper – 8 to 10 nos
Bay Leaves – 2 to nos
Fennel seeds – 3 tsp
Whole Coriander Seeds – 3 tsp
Whole Green Chillis – 4 to 5 nos
Whole Garlic Buds – 2 nos
Whole Onions – 2 nos (Medium sized)
Salt – 1 tsp
INGREDIENTS FOR BIRYANI PREPARATION
Oil – 3 TBsp
Cumin Seeds – 1 tsp
Black Cardamom – 2 nos
Cinnamon Stick – 1 piece
Green Cardamom – 3 nos
Cloves – 4 to 5 nos
Black Peper – 8 to 10 nos
Star Anise – 1 nos
Mace (Javitri) – 1 nos
Bay Leaves – 2 nos
Ginger Garlic Paste – 2 tsp
Green Chillis – 4 – 5 nos
Salt – 1 tsp
Curd – 1 bowl
Tomatoes – 2 nos (medium sized, diced)
Fried Onions – 3 tsp
